Fideua de Garbanzos

Cultural Context

Fideuà originated in the coastal region of Valencia, Spain, as a variation of paella, traditionally made with noodles instead of rice. This dish reflects the region's rich maritime heritage, often featuring seafood, but the chickpea version is a delightful vegetarian alternative. Today, fideuà is celebrated across Spain and has gained popularity internationally, often enjoyed in family gatherings and festive occasions.

1

Add 2 1/2 cups of vegetable broth into a saucepan and add 1/4 teaspoon of saffron threads. Heat over medium heat.

2

Heat a large fry pan (12-inch paella pan) over medium heat and add 3 tablespoons of extra virgin olive oil.

3

Finely chop 1 small onion, roughly chop 8 cloves of garlic, and finely chop 1 red bell pepper.

4

Add the chopped vegetables to the hot pan and mix them around to coat in the olive oil, stirring continuously to avoid browning.

5

After about 4 minutes, when the vegetables are lightly sautéed, add 1 teaspoon of sweet smoked Spanish paprika and mix quickly to avoid bitterness.

6

Add 1/2 cup of tomato sauce, season with sea salt and freshly cracked black pepper, and mix well. Simmer for a few minutes.

7

Measure out 8 ounces of fideos and drain and rinse 1 can of chickpeas.

8

After simmering the tomato sauce for 3 to 4 minutes, add the fideos and rinsed chickpeas to the pan and mix well.

9

Gently add the simmering vegetable broth into the pan and mix to evenly distribute.

10

Simmer on medium heat for 7 to 8 minutes without stirring to maintain the pasta's texture.

11

After 8 minutes, if there is still some liquid left, lower the heat and simmer for another 3 to 4 minutes until all liquid is absorbed.

12

Remove from heat, cover with a dishcloth, and let it sit for a few minutes to ensure the pasta is cooked through.

13

Uncover and garnish with lemon wedges and fresh parsley.
