4 Cups cooked garbanzo beans or 2-15oz. cans garbanzo beans rinsed and drained
1 Pint Grape Tomatoes or 2-10oz. cans diced tomatoes, with no salt added
1-8oz. can tomato sauce
1 cup Red Onion, diced small
1 Poblano or Green chile, diced small
1 tsp California Roasted Minced Garlic
2 Tbsp Sweet Chili Powder
½ Cup Low Fat French Dressing- Fat Free is great also
½ tsp Kosher Salt

Heat olive oil in a large pot over medium heat.

Add chopped onion and bell pepper, sauté until softened, about 5 minutes.

Stir in minced garlic and cook for another minute until fragrant.

Add diced tomatoes, sweet corn, and drained chickpeas to the pot.

Sprinkle in chili powder, cumin, smoked paprika, salt, and black pepper; stir to combine.

Pour in vegetable broth and maple syrup, bring to a simmer.

Reduce heat to low and let it cook for 20-25 minutes, stirring occasionally.

Taste and adjust seasoning if necessary.

Serve hot, garnished with fresh cilantro.
