Spanish Pasta with Romesco Sauce

Preheat the oven to 425°F.
Cut cauliflower into florets and sprinkle with garlic powder and smoked paprika.
Spread cauliflower on a baking sheet and roast for 30 minutes.
Toast slivered almonds in a pan for about 3 minutes until fragrant and slightly darker.
Remove almonds from the pan and toast nutritional yeast in the same pan until golden brown.
In a food processor, combine roasted red peppers, fire-roasted canned tomatoes, parsley, garlic, toasted nutritional yeast, smoked paprika, and cayenne pepper; blend until smooth.
Add salt, lemon juice, and toasted almonds to the mixture and blend until desired texture is achieved.
Cook spaghetti according to package instructions; rinse and drain after cooking.
Once cauliflower is done, assemble bowls with spaghetti, romesco sauce, and roasted cauliflower on top.
Optionally, add vegan parmesan and extra parsley for garnish.
