Chop the top off one head of garlic and wrap it in aluminum foil with olive oil, salt, and pepper or all-purpose seasoning.
Roast the garlic in a 400 degree oven for 40 minutes until soft.
Season chicken tenders with all-purpose seasoning, cajun seasoning, hot sauce, and cayenne pepper. Mix well and marinate in buttermilk for 30 minutes or overnight.
In a bowl, mix 2 cups of flour with sason, cayenne pepper, and all-purpose seasoning. Taste to ensure it's seasoned well.
Melt half a stick of butter in the microwave and combine with half a stick of room temperature butter, diced parsley, grated garlic, and parmesan cheese. Mix well and set aside.
Grate 2 cups of mozzarella cheese and dice one onion. Prepare 1/4 cup of sun-dried tomatoes.
Boil cavatoppe noodles in heavily salted water according to package instructions, stirring occasionally. Save 1 cup of pasta water before draining the noodles.
Fry 4 pieces of bacon on medium heat until crispy, then remove and place on paper towels.
In the bacon fat, sauté the diced onion for 3-4 minutes until tender, then add sun-dried tomatoes and mix.
Add roasted garlic to the onion and tomato mixture.
Stir in 2 tablespoons of flour and all-purpose seasoning to create a roux, cooking for 2-3 minutes to eliminate raw flour taste.
Add cream to the roux, bring to a boil, then reduce to a simmer.
