Cut the chicken into bite-sized chunks and add them to a large bowl with olive oil, lemon juice, salt, paprika, cumin, garlic powder, onion powder, and black pepper. Mix well, cover, and leave to marinate for 30 minutes.

Heat a large frying pan over high heat. Add the marinated chicken, cover, and cook until the color changes and fully cooked, stirring every few minutes. Drain all the excess water from the chicken. Add the diced green bell pepper, red bell pepper, and chopped onion.

Reduce the heat to medium, stir the vegetables with the chicken, and cook, stirring often very gently for about 15 minutes or until the vegetables start to soften.

Heat a large skillet over medium-low heat. Brush with butter, place a tortilla, add some mayonnaise and Sriracha sauce, then the chicken mixture over, and sprinkle about 2 to 3 tablespoons of Mozzarella cheese. Fold the tortilla in half.

Cook for about 1 to 2 minutes on each side until golden brown and the cheese is melted.

Cut the quesadillas in half and serve with guacamole.
