Soak red beans overnight in water.

Drain the water from the soaked beans and add them to a pressure cooker with hot water.

Add 1/2 onion, 1 sprig of thyme, 1/2 bell pepper, 1 peeled carrot cut in half, and a meat bone for flavor.

Add diced green plantain, 3 crushed garlic cloves, a pinch of salt, coloring to taste, and freshly ground black pepper, then stir.

Cook in the pressure cooker for about 20 minutes.

While the beans are cooking, place chicharrón in the air fryer until golden brown.

In a skillet, add a splash of oil and 3 crushed garlic cloves, followed by chopped green onion and diced onion, and stir.

Add diced or grated tomato and 1/2 chopped bell pepper, then stir well.

Season with a pinch of salt, freshly ground black pepper, and optionally add beef bouillon for more flavor, then stir again.

After about 25 minutes, check the beans; they should be tender. Remove the carrot and mash it, then return it to the beans.

Mix part of the hogao (sauce) into the beans and let it cook on low heat for 5 more minutes.

To the remaining hogao, add 1 lb of ground beef and mix well. Optionally add a splash of soy sauce and stir until fully integrated.

In another skillet, add chorizos of your choice and brown them on all sides.

In a saucepan with butter, crack in an egg and cook to your desired doneness.

Begin plating by adding a generous portion of rice, followed by a portion of beans, ground beef, a chorizo, a generous piece of chicharrón, a good slice of avocado, the egg, 2 slices of ripe plantain, and finally an arepa.
