Enchiladas Rojas

8 to 10 dried Guajillo chiles
2 chiles de Árbol or chiltepines
2 garlic cloves
1 tsp salt
1 tsp Mexican oregano
3 cups of water
1/2 Tbsp oil (neutral)
10-12 corn tortillas
2 to 3 cups of Mexican chihuahua cheese or white melty cheese
1 onion
Mexican cream
Cotija cheese
Cilantro or green onion for garnish
Fried egg
shredded chicken or ground beef (optional)

Prepare the enchilada sauce by soaking the dried Guajillo chiles and chiles de Árbol in hot water until softened.

Blend the softened chiles with garlic, salt, Mexican oregano, and 3 cups of water until smooth.

Heat 1/2 Tbsp of oil in a pan and pour in the blended sauce, cooking until it thickens slightly.

In a separate pan, lightly fry the corn tortillas to soften them.

Assemble the enchiladas by dipping each tortilla in the sauce, adding cheese and onion, and stacking them.

Top with Mexican cream, Cotija cheese, and garnish with cilantro or green onion.

Serve with a fried egg on top and optional shredded chicken or ground beef.
