Nutritional yeast adds flavor without dairy.
Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onion and sauté until translucent, about 5 minutes.
Stir in minced garlic and cook until fragrant, about 1 minute.
Add pearl couscous and toast for 2-3 minutes, stirring frequently.
Pour in vegetable broth and bring to a boil.
Reduce heat to low, cover, and simmer for 10-12 minutes until couscous is tender.
Stir in halved cherry tomatoes and cook for an additional 2-3 minutes until heated through.
Remove from heat and stir in chopped parsley and lemon juice.
Season with salt, black pepper, and red pepper flakes to taste.
Serve warm, garnished with additional parsley and grated parmesan if desired.
