Prepare the cheese sauce by adding shredded Wisconsin sharp cheddar cheese to the beer mixture, adjusting thickness as needed.
Toast the slider buns in smoked tallow until golden brown.
Assemble the sliders by placing two bratwurst patties on each bun, topping with sautéed onions and bell peppers, and pouring beer cheese sauce over the top.
