Dice half of a medium yellow onion.
Measure out one cup of long grain rice and rinse until the water comes out clear.
Place a medium pot over medium high heat and add about two tablespoons of olive oil.
Add the rice and diced onion to the pot and stir, sautéing for about three minutes.
Add one and a half cups of water and one teaspoon of kosher salt, stir, and bring to a boil.
Lower to medium low heat, cover, and let cook until the rice is tender but not mushy, adding more water if needed.
In a separate large pan over medium heat, add three tablespoons of olive oil and sauté the onions until golden brown.
Stir in three minced garlic cloves and sauté for a couple of minutes.
Pour in three cups of cooked black beans, including some liquid, and let them cook until the liquid thickens and coats the beans, mixing in salt to taste.
In a blender, combine one cup of sour cream, a quarter cup of mayonnaise, two chipotles in adobo, one whole peeled garlic clove, one teaspoon of kosher salt, and the juice of half a lime. Blend until smooth and refrigerate.
In a large pan over medium high heat, add a couple of tablespoons of olive oil and one pound of ground beef. Press down with a potato masher to brown the bottom.
Season the beef with two teaspoons of ancho chili powder, two teaspoons of smoked paprika, two teaspoons of onion powder, two teaspoons of garlic powder, half a teaspoon of ground cumin, and one teaspoon of kosher salt. Cook until fully browned.
Add one cup of low sodium beef broth to deglaze the pan and cook until the liquid reduces and the meat is moist.
Fluff the rice and mix in the juice of half a lime and half a cup of finely chopped cilantro.
Heat an extra large flour tortilla in a 350°F oven until pliable.
Arrange the filling in the center of the tortilla: rice, beans, meat, pico de gallo, shredded cheese, lettuce, and drizzle with chipotle sauce.
Fold the ends of the tortilla inward and roll tightly from the bottom to form the burrito.
Cut the burrito in half and serve with extra chipotle sauce on the side.
