Preheat the oven to 400°F (200°C).

Wash and peel the carrots, then cut them into uniform sticks.

Melt butter in a small saucepan over low heat.

Add minced garlic to the melted butter and sauté until fragrant, about 1-2 minutes.

In a large bowl, combine the carrot sticks with the garlic butter.

Add honey, lemon juice, salt, and black pepper to the bowl and toss to coat evenly.

Spread the carrots in a single layer on a baking sheet.

Roast in the preheated oven for 20-25 minutes, stirring halfway through, until tender and caramelized.

Remove from the oven and sprinkle with chopped fresh parsley before serving.
