1

Add 2 eggs into a saucepan and fill with water just enough to barely cover the eggs.

2

Heat the saucepan on high heat until it comes to a boil, then place a lid on and turn off the heat, leaving the eggs to sit for 10 minutes.

3

In a stockpot, heat 1/4 cup of extra virgin olive oil over medium heat.

4

Cut 2 slices from a baguette, each about 1/2 inch thick, and remove the skins from 4 cloves of garlic.

5

Add the baguette slices, garlic, and 15 raw blanched almonds into the stockpot and fry for 3 to 4 minutes until golden.

6

Transfer the fried ingredients into a mortar and reserve the olive oil in the pan.

7

In the same pan, add 1 medium-sized finely chopped onion and 3 roughly chopped cloves of garlic, mixing continuously for about 4 minutes until the onions are slightly translucent.

8

Add 1/2 cup of tomato sauce and season with sea salt and freshly cracked black pepper, mixing well and simmering for 3 to 4 minutes until thickened.

9

Pour in 1/2 cup of dry white wine and simmer for a few minutes until the alcohol cooks off.

10

Drain a jar of cooked white beans into a colander, rinse under water, and set aside.

11

Add the rinsed beans and 2 1/2 cups of vegetable broth into the stockpot, turning the heat to high and gently mixing.

12

In the mortar, add 1/4 teaspoon of saffron threads, 2 tablespoons of chopped parsley, and a kiss of sea salt, then pound into a paste-like texture.

13

Once the broth comes to a boil, add the bread and almond mixture, mixing well, then cover and lower the heat to simmer for 10 minutes.

14

After 10 minutes, remove the lid and turn off the heat, then add in the shredded hard-boiled eggs and mix gently to combine.

15

Transfer some of the mixture into a shallow bowl and garnish with fresh parsley.
