1

Prepare 2 young guinea pigs by cleaning them and removing innards.

2

Season the guinea pigs with salt, rubbing it all over.

3

Let the guinea pigs drain for 1 hour to remove excess liquid.

4

Cut each guinea pig into 4 pieces for easier frying.

5

Heat about 1/2 liter of vegetable oil in a frying pan until hot.

6

Place the guinea pig pieces in the pan skin-side down, filling the pan without overcrowding.

7

Cover the pan and fry for 2 minutes before flipping the pieces.

8

After 5-6 minutes, check the guinea pig pieces; they should be golden brown.

9

Carefully flip the pieces to ensure even cooking and browning.

10

Once golden and cooked through, remove the guinea pig pieces from the oil.

11

In the same pan, remove excess oil, leaving some for making the potato sauce.

12

Add chopped onion to the pan and sauté until translucent.

13

Add cumin, minced garlic, aji Colorado, black pepper, and oregano to the onions and fry well.

14

Add salt to taste and check seasoning as the potatoes will absorb it.

15

Pour in 1/2 cup of water and add cubed potatoes to the pan, mixing well with the sauce.

16

Cover and cook for 5 minutes, checking for doneness and seasoning.

17

Serve the guinea pig pieces alongside the potato stew and white rice.
