Knead dough on a floured surface until smooth, about 5 minutes.
Wrap dough in plastic wrap and refrigerate for 30 minutes.
Sauté onion, bell pepper, and garlic in a skillet until soft, about 5 minutes.
Add cooked sausage, cumin, paprika, salt, and pepper; cook for 2 minutes.
Remove from heat and stir in cheese and parsley until melted.
Preheat oven to 375°F (190°C).
Roll out dough on a floured surface to 1/8 inch thick.
Cut circles from dough and fill with sausage mixture.
Fold dough over filling and crimp edges to seal.
Brush tops with egg wash.
Bake until golden brown, about 20-25 minutes.
