1/2 red onion, roughly diced
1 can drained vegetables
1 orange seasoning packet (sazon)
2 cups washed rice

Heat a pan on medium high heat and add 2 tablespoons of cooking oil.

Add 1 chicken bouillon cube and break it up for easier mixing.

Add 1 tablespoon of sofrito to the pan.

Add 1/2 of a red onion, roughly diced, to the pan.

Add 1 can of drained vegetables (or frozen vegetables) to the pan.

Add 1 orange seasoning packet (sazon) to the mixture and combine everything together.

Add 2 cups of washed rice to the pan and mix it to coat the rice with the color from the seasoning.

Cover the rice with almost 3 cups of water and mix it together.

Raise the flame to high and cover the pot for 8 to 10 minutes, until the rice absorbs all the liquid.

After 8 to 10 minutes, lower the flame to low and form a 'rice mountain' by pulling the rice from the sides of the pot to prevent sticking.

Cover the pot with aluminum foil and cover it for 25 minutes, setting a timer.

After 25 minutes, remove the lid and foil to reveal the rice, then turn off the heat.

Move the rice around to break it up and serve.
