1/2 cup kimchi, chopped
1 tsp sugar
1 cup shredded cheddar cheese
1 tbsp butter
2 slices sourdough bread
1 tbsp oil

Squeeze the juice out of the kimchi and chop it.

Add sugar to the chopped kimchi and mix well.

Put the cheese into two piles.

Butter one side of each slice of bread.

Oil the griddle and place the bread on it with the butter side down.

Put a pile of cheese on each slice and add kimchi to one slice.

Place the slice without kimchi on top of the kimchi slice of bread.

Add butter to the outside of the sandwich.

When the cheese starts to melt inside, turn the sandwich over and butter that side.
