Pizza Dosa

1 cup rice flour
1/2 cup urad dal flour
1/4 cup semolina
1/2 tsp salt
1/2 tsp turmeric powder
1/2 tsp red chili powder
1/2 cup water (or as needed)
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/2 cup chopped bell peppers
1/2 cup sliced mushrooms
1/4 cup sliced olives
1/4 cup chopped onions
1 tbsp olive oil (for cooking)

In a mixing bowl, combine rice flour, urad dal flour, semolina, salt, turmeric powder, and red chili powder.

Gradually add water to the dry ingredients and mix until you achieve a smooth batter. Let it rest for 15-20 minutes.

Heat a non-stick skillet or dosa pan over medium heat and lightly grease it with olive oil.

Pour a ladleful of the batter onto the skillet and spread it into a thin circle, similar to a pancake.

Cook for 2-3 minutes until the edges start to lift and the bottom is golden brown.

Spread a layer of pizza sauce over the dosa, followed by a generous amount of shredded mozzarella cheese.

Top with chopped bell peppers, sliced mushrooms, olives, and onions as desired.

Cover the skillet with a lid and cook for another 2-3 minutes until the cheese melts.

Once the cheese is melted and the toppings are cooked, carefully fold the dosa in half and slide it onto a plate.

Repeat the process with the remaining batter and toppings.

Serve hot with extra pizza sauce or chutney on the side.
