Mexican Stuffed Sweet Potato

2 large sweet potatoes
1 cup minced onion
2 tablespoons olive oil
2 cloves minced garlic
1 lb ground turkey
1 teaspoon cumin
1 teaspoon garlic salt
1 teaspoon oregano
1 tablespoon chili powder
2 tablespoons tomato paste
1 can (15 oz) black beans
1 cup corn
1/4 cup cilantro
1 can (14.5 oz) diced tomatoes
1 cup shredded cheddar cheese
1 avocado
1/2 cup sour cream

Wrap sweet potatoes in plastic wrap and poke holes in them.

Microwave sweet potatoes for about 5 minutes.

In a skillet, heat olive oil and add minced onion, sauté for about 30 seconds.

Chop cilantro and add it to the mixture along with diced tomatoes, shredded cheddar cheese, and cut up avocado.

Remove sweet potatoes from the microwave carefully and let them dry out after removing the plastic wrap.

Cut sweet potatoes in half lengthwise and place on a plate.

Spoon the meat mixture on top of the sweet potatoes.
