Rinse the tripe in cold water, drain the soaking liquid, and rinse again.

3

Cut the tripe into bite-sized pieces using sharp kitchen shears.

4

Make an onion garlic puree with the chopped onion, garlic, beef bouillon powder, and warm water in a blender.

5

Add the puree to the instant pot along with the tripe, one bay leaf, and the menudo spice mix.

Pour in about 1.5 liters of water and mix well, without adding salt at this stage.

Seal the instant pot lid and set it to pressure-cook for 75 minutes.

8

After cooking, allow for a natural release for about 20 minutes before opening the lid.

Taste the menudo for salt and add salt to taste, approximately 1/2 tablespoon or more if needed.

Add the drained and rinsed hominy to the pot and set the instant pot to sauté mode.

11

Simmer the menudo with the hominy for about 15 to 20 minutes, stirring occasionally.

Skim off any fat that floats on top during the simmering process.
