1

Cut the honeycomb into small cubes, about one inch.

2

Wash the honeycomb with 1/2 cup of apple cider vinegar to remove the smell and tenderize it.

3

Rinse the honeycomb thoroughly with cold water.

4

In a 12-quart pot, add the honeycomb and fill halfway with water.

5

Add 1 white onion, 5 garlic cloves, 2 bay leaves, 2 tablespoons of oregano, and salt to taste.

6

Add the juice of 1 lime to help with the smell.

7

Cook on medium-high heat for about 1.5 hours.

8

After 1.5 hours, rinse the hominy and reserve 1 cup for the chili sauce.

9

Remove the onion, garlic, and bay leaves from the pot.

10

Add the rinsed hominy to the pot with the meat and cook for another 30 minutes.

11

For the chili sauce, rinse the chili pods and bring them to a boil for 8-10 minutes until soft.

12

Blend the boiled chili pods, 2 garlic cloves, 1 cup of reserved hominy, and 2.5 cups of water until smooth.

13

Strain the chili sauce into the pot with the menudo and add 1 cup of water to the blender to get all the sauce out.

14

Add 5 chile de árbol for extra spice if desired and let it simmer for 20 minutes.

15

Serve the menudo hot, garnished with cilantro, onion, and lime juice.
