Rice 150g (180ml)
Water (for cooking rice) 360ml
Water (to cool the rice) 450ml
Dried Koji (malted rice) 200g (If you use not dried one, it will be 400g)

Cook rice with plenty of water (360ml).

Keep the rice cooker warm, add water little by little (Total about 450ml), mix and let it cool.

When the temperature drops below 60 degrees, add the Koji (malted rice) and mix.

Cover it with a wet cloth and keep warm for 8 hours. ★KEY POINT → Koji bacteria will die at over 60 degrees, so measure it sometimes with a thermometer and keep it during 50-60 degrees.

When it becomes a paste, it is done!
