Prepare the tortillas by blending 1.5 cups of cooked carrot with a pinch of salt and the cooking water.
Incorporate the blended carrot into corn flour gradually to form a soft, moist dough.
Shape the dough into balls, press them flat, and cook on a hot skillet until they puff up, about 3 turns.
For the filling, shred 0.5 kg of smoked marlin and chop 0.5 onion, 2 green bell peppers, and 2 cloves of garlic finely.
Sauté the onion, garlic, and bell peppers in a bit of oil until soft without changing color.
Add the marlin and cook on medium heat for 3 minutes until softened.
Stir in 3 chopped tomatoes and cook for an additional 3 minutes until juicy.
Season with salt, pepper, and 2 tablespoons of chipotle powder and mix well.
Add 1.5 tablespoons of mayonnaise to enhance flavor and mix thoroughly.
Assemble the tacos with the filling and top with cheese for gratin.
Cook the tacos on low heat until crispy, about 5 minutes, flipping occasionally.
Serve with a fresh salad of lettuce, cucumber, and avocado dressed with olive oil, lime, salt, and pepper.
