1 small piece of ginger (cut into slices)
1 bay leaf
1 tsp minced garlic

19 oz. enchilada sauce can
2 Tbsp Chipotle peppers in adobo sauce (3 peppers from the adobo sauce can roughly chopped)
1 tsp cumin powder
1 ½ tsp sugar
1 tsp black pepper (this is totally optional)
½ cup water
1 cup basmati rice
½ to 3/4 cup water
1 tsp salt
2 tsp lime juice
1 large green bell pepper (cut julienne)
½ medium size onion (cut julienne)
1 Tbsp oil
½ to 1 Tbsp taco seasoning
