Sweet Potato Tacos

3 tbsp olive oil
1 medium onion
1/4 tsp salt
1 medium sweet potato
juice from 1 orange
1 tsp cumin
1/2 tsp paprika
1/2 tsp black pepper
1 can (400 g) red kidney beans
1/2 tbsp orange zest
1 medium avocado
juice from 1 lemon
1/2 tsp salt
1/2 tsp black pepper
1 clove garlic

Heat olive oil in a pan, add chopped onions and salt, and sauté until caramelized. Remove from the pan.

In the same pan, cook the diced sweet potato. Add orange juice, cumin, paprika, and black pepper. Mix well.

Add the drained kidney beans and caramelized onions to the sweet potato. Stir in orange zest and mix everything together.

Blend all the avocado sauce ingredients in a blender until smooth and creamy.

Lightly brush the taco shells with olive oil and bake them in the oven at 200°C for 10-15 minutes until crispy.

Spread avocado sauce inside the taco shells. Fill them with the cooked mixture. Garnish with chopped parsley and a bit of lemon zest for extra freshness and presentation.
