Sweet Potato Tacos

1 medium sweet potato

Peel the sweet potato.

Cut the sweet potato into cube-sized pieces, about 1 to 1.5 inches.

Create a flat surface by cutting off a large swatch at the bottom of the sweet potato.

Cut long strips from the sweet potato, then cut those strips into cubes.

Place the cubed sweet potato into a medium mixing bowl.

Add 1 tablespoon of olive oil and 1 tablespoon of taco seasoning to the sweet potato.

Mix the sweet potato, olive oil, and taco seasoning until well combined.

Preheat the oven to 425 degrees Fahrenheit.

Spread the seasoned sweet potato cubes onto a baking sheet, ensuring they have space between them.

Bake the sweet potato in the oven for 25 to 35 minutes, until fork tender.

While the sweet potato is baking, prepare the sauce by adding Greek yogurt to a blender.

Add 2 tablespoons of olive oil to the blender with the Greek yogurt.
