Roasted Sweet Potato Hummus

2 medium sweet potatoes
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup tahini
2 tbsp olive oil
2 tbsp lemon juice
2 cloves garlic, minced
1/2 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp paprika
2-3 tbsp water (as needed)

Preheat the oven to 400°F (200°C).

Peel and cube the sweet potatoes, then place them on a baking sheet.

Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat.

Roast in the oven for 25-30 minutes, or until tender and slightly caramelized.

Remove from the oven and let cool slightly.

In a food processor, combine the roasted sweet potatoes, garbanzo beans, tahini, lemon juice, garlic, cumin, and paprika.
