Grain-Free Pie Crust

1 1/2 cups almond flour
1/4 cup coconut oil, melted
1/4 tsp salt
2 tbsp honey or maple syrup
1/4 tsp vanilla extract
1 egg (optional, for binding)

Preheat your oven to 350°F (175°C).

In a mixing bowl, combine the almond flour and salt.

Add the melted coconut oil, honey (or maple syrup), and vanilla extract to the dry ingredients. Mix until well combined.

If using, add the egg to the mixture and stir until a dough forms. If the dough is too crumbly, add a little water, one teaspoon at a time, until it holds together.

Press the dough into a 9-inch pie pan evenly across the bottom and up the sides.

Prick the bottom of the crust with a fork to prevent bubbling during baking.

Bake the crust in the preheated oven for 10-12 minutes, or until lightly golden.

Remove from the oven and let it cool before filling with your desired pie filling.
