Sunflower Lentil Spread

1 cup lentils
1 15-ounce can of lentils, rinsed and drained
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons sunflower seeds
1 diced celery stalk
1 finely diced scallion
2 tablespoons chopped fresh parsley
1 whole-wheat pita

Combine 1 rinsed and drained 15-ounce can of lentils, 1 tablespoon of lemon juice, and 1/4 teaspoon each of salt and freshly ground black pepper in a blender.

Blend until smooth.

Transfer the mixture to a bowl.

Stir in 2 tablespoons of sunflower seeds, 1 diced celery stalk, 1 finely diced scallion, and 2 tablespoons of chopped fresh parsley.

Microwave a whole-wheat pita on high for 1 minute.
