Cut chayote into thin rectangular pieces and place in a bowl.

Add 5 spoons of sugar to the chayote and mix; marinate for 15 minutes.

In another bowl, mix 2 spoons of sugar with 100 gms of chickpea flour and a pinch of salt.

Add 50 to 60 ml of water to the chickpea flour mixture and mix until a thick paste forms, breaking any lumps.

Add the marinated chayote to the batter and coat thoroughly.

Heat 60 ml of oil in a pan until hot.

Fry the coated chayote pieces in the hot oil, turning until golden brown.

Remove from the oil and serve.
