½ kg boiled kidney beans
¼ kg rice (soaked for 30 minutes)
1 cup green onions, finely chopped
1 cup green capsicum, finely chopped
1 cup red capsicum, finely chopped
1 cup sweet corn
1 cup tomato purée
½ cup fresh green coriander, finely chopped
2 tablespoons garlic, finely chopped
Juice of 1 lemon
3 tablespoons cooking oil
1 tablespoon olive oil
1 teaspoon salt (or to taste)
1 teaspoon black pepper powder
1 teaspoon cumin powder
1 teaspoon paprika powder
¼ teaspoon red chilli powder

Heat cooking oil in a wok or deep pan.

Add green onions, green capsicum, and red capsicum. Sauté until slightly soft.

Add chopped garlic and fry for 1 minute until fragrant.

Add tomato purée, salt, cumin powder, paprika, and red chilli powder. Mix well and cook for 2–3 minutes.

Add soaked rice, boiled kidney beans, sweet corn, and 1 cup of water. Mix gently.

Bring to a boil, then cover and cook on low heat for 15 minutes.

After 15 minutes, uncover and add green coriander, extra green onions, olive oil, lemon juice, and black pepper powder. Mix lightly.

Cover again and cook for another 5 minutes.

Turn off the heat and let it rest for a minute.
