Peel a few cloves of garlic and add them to a pan.
Cover the garlic cloves with extra virgin olive oil.
Cook the garlic very slowly, emphasizing the importance of slow and low cooking.
Prepare bruschetta with local goat cheese and sourdough bread, spreading the confit garlic generously on top.
Add peppery nasturtium leaves to the bruschetta for flavor.
Puree butternut squash and mix in the confit garlic, mashing it until it disappears into the puree.
Prepare to roast garlic by chopping the top off a bulb and placing it in tin foil with rock salt at the bottom.
Wrap the garlic in the foil like a tent and cook it in the oven at 180 degrees Celsius for 40 minutes, checking on it periodically.
Let the roasted garlic cool down before handling, as it will be extremely hot.
Serve the roasted garlic with butter to make garlic butter or with a jacket potato and sour cream.
