Kalbi Marinated Bison Medallions

1 lb bison medallions
1/4 cup soy sauce
2 tbsp brown sugar
2 tbsp sesame oil
2 cloves garlic, minced
1 inch ginger, grated
1/4 cup green onions, chopped
1 tbsp rice vinegar
1 tsp black pepper
1 tsp sesame seeds

In a bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper to create the marinade.

Place the bison medallions in a resealable plastic bag or shallow dish and pour the marinade over them.

Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Preheat your grill or grill pan over medium-high heat.

Remove the bison medallions from the marinade and let any excess drip off.
