It is popular for family gatherings and celebrations, showcasing the vibrant flavors of Mexican cuisine.

Smoked paprika provides a similar smoky flavor at a lower cost.
Start by boiling the chicken in a deep saucepan.
Add 1 chicken breast and 2 chicken thighs to the saucepan.
Cover the chicken with water.
Add 1/2 onion, 1 bay leaf, and 2 whole allspice to the water.
Smash 2 garlic cloves and add them to the water.
Bring the water to a boil.
Once boiling, add salt and reduce the temperature to medium.
Cook until the chicken is fully cooked, then remove and set aside.
Cover the chicken with saran wrap halfway to cool completely.
Reserve the chicken broth for later use.
Dice 3 tomatoes and set aside.
Grind 3 whole allspice and 1/3 teaspoon of whole cumin together.
Add oregano and a little water to the ground spices and mix well.
Chop a small bunch of cilantro finely and set aside.
Slice 1 medium onion into small pieces.
Blend 4 chipotle peppers in adobo sauce with 4 tablespoons of adobo sauce and chicken bullion.
Add 3/4 cup chicken broth to the blender and blend well.
Shred the cooked chicken into bite-sized pieces.
In a Dutch oven, heat 5 tablespoons of vegetable oil over medium heat.
Add the sliced onions and sauté until slightly translucent.
Add the ground spices and sauté for about 30 seconds.
Add 2 bay leaves and diced tomatoes to the pot.
Once the tomatoes start boiling, add chopped cilantro and stir.
Add the blended chipotle mixture to the pot and stir.
Add a little more chicken broth if needed and reduce the heat to medium-low.
Let it simmer for about 15 minutes.
After simmering, add the shredded chicken to the pot and fold it into the sauce.
Taste and adjust salt as necessary, considering the saltiness of the chicken broth.
Let it simmer for an additional 5 minutes to allow flavors to meld.
Prepare tostadas by spreading optional refried beans on them.
Top with chicken tinga, lettuce, queso fresco, and sour cream or crema.
