Chipotle Oven Roasted Chicken

Prepare the dressing by adding 1/4 cup chipotle in adobo sauce, 1 garlic clove, soy sauce, honey, and juice of 1 lime into a food processor or blender.
Blend the mixture on high until well combined into a paste for about 2 minutes.
Taste the dressing and adjust seasoning with salt and black pepper if needed, then reserve about 1/4 cup of this dressing in a separate bowl for basting later.
Trim excess fat or skin from the chicken if desired, then dry the chicken with paper towels, including the inside of the cavity.
Season the chicken on all sides with a mixture of salt and black pepper, including beneath the skin and inside the cavity.
Massage the chipotle mixture all over the chicken, ensuring to coat under the skin and inside the cavity.
Stuff the cavity of the chicken with dry chipotles and 1 garlic clove, then tie the legs together to keep everything in place.
Marinate the chicken for at least 1 hour.
Preheat the oven to 400°F (204°C).
Roast the chicken in the oven for about 50 minutes to 1 hour, or until fully cooked.
After 30 minutes, remove the chicken from the oven and brush it with the reserved dressing, then return it to the oven for another 20 to 30 minutes.
Check that the internal temperature of the chicken reaches 165°F (74°C) to ensure it is fully cooked.
Let the chicken rest for at least 10 minutes before serving.
