Break both eggs into a bowl and season with salt and black pepper.

Beat the eggs with a fork.

Heat a pan on medium heat and add 2 teaspoons of oil.

Add the beaten eggs to the pan and cook until almost set on top.

Add a little bit of cheese on top of the eggs and place the tortilla on top to help it stick.

Let it cook for a few more seconds before flipping it to the other side.

Add about 2 tablespoons of cheese on top of the eggs and spread it evenly.

Fold the tortilla and let it cook on both sides until golden brown.

Serve with sour cream on top.
