250g well-fermented kimchi
1 carrot, thinly sliced
1 courgette, thinly sliced
4 spring onions (green part only)
100ml water
2 tbsp kimchi brine
1 tbsp gochugaru (red-pepper flakes)
1 tsp sugar
30g plain flour
30g cornflour
1 tbsp rice flour (optional)
2 tbsp oil
4-6 spring onions, julienned and soaked in ice water
1 tbsp toasted sesame seeds
1 tbsp sesame oil
1 tsp soy sauce
1 tbsp rice vinegar
1 tbsp sugar (or to taste)
1 tbsp soy sauce (for dip)
2 tbsp rice vinegar (for dip)
1 tbsp sugar (or to taste, for dip)

Add all the pancake ingredients, except the oil, into a large bowl, saving some of the green spring onion. Gently mix until everything is combined.

Add a splash of oil to a nonstick pan on medium heat.

Ladle the mixture into the pan and spread it out as evenly as possible. Layer the reserved spring onion on top.

Cook until crisp, gently moving the pancake around the pan to prevent sticking.
