Pork shoulder is leaner and chicken thighs are more budget-friendly.

Rinse the beef tongue with cold water.

Boil the beef tongue with onion, bay leaves, black peppercorns, marjoram, thyme, oregano, and salt for 4 to 5 hours.

Peel the skin off the tongue using a paring knife or sharp knife once it can be handled.

Slice the tongue against the grain into thin pieces.

Roast tomatillos, tomatoes, jalapeño, serrano, and garlic under the broiler until roasted.

Mash or puree the roasted ingredients with a whole chipotle in adobo and salt to make salsa martajada.

Heat oil in a skillet and sear the sliced tongue quickly.

Pour the salsa over the seared tongue and let it cook for a minute.

Warm the corn tortillas and assemble the tacos with sliced tongue, cilantro, and onion.
