Pork shoulder is leaner and chicken thighs are more budget-friendly.

Cut the beef tongue into smaller pieces for faster cooking.

Boil a pot of water and add 5 cloves of garlic, 1 quart of onion, 2 bay leaves, and the beef tongue.

Add 1 tablespoon of kosher salt and adjust as needed.

Cover and simmer, removing impurities every five minutes.

Check for saltiness after an hour and adjust if necessary.

Boil 14 small tomatillos, 1/2 onion, 1 garlic clove, 2 serrano peppers, and 2 jalapenos for 7 to 10 minutes to make the green salsa.

Remove stems from the peppers and blend all salsa ingredients with fresh cilantro and salt until well blended.
