Tortillas are a staple in Mexican cuisine, originating from ancient Mesoamerican cultures. Traditionally made from corn, they serve as a base for countless dishes, from tacos to enchiladas. In modern times, tortillas have gained popularity worldwide, with variations including flour tortillas and even gluten-free options.

Whole wheat flour adds fiber, while all-purpose flour is more accessible.

Avocado oil is healthier but more expensive; vegetable oil is a cost-effective alternative.
Add 3 and 1/2 cups of all-purpose flour to a mixing bowl.
Add 1 teaspoon of salt and 1/4 teaspoon of baking powder to the flour and mix.
Add 1/2 cup of lard to the flour mixture and break it up with your hands, mixing it in until evenly distributed.
Gradually add 1 cup of hot water to the mixture, making sure the water is hot but not burning.
Knead the dough for 5 minutes, then roll it into a ball and place it back in the bowl.
Cover the dough with a clean kitchen towel and let it rest for 15 minutes.
Prepare the skillet by rubbing it with vegetable oil and setting the stove to medium-high heat.
Divide the dough into 12 equal pieces by squeezing it between your fingers.
Shape each piece into a ball by turning, tucking, and pressing down in the middle to form a circle.
Sprinkle some flour on the surface and roll out each ball into a tortilla, turning and rolling until desired thickness is achieved.
Cook each tortilla in the skillet, listening for the sizzle and flipping it when it starts to bubble, cooking for about 15 seconds on the second side.
Place the cooked tortillas in a container lined with a clean kitchen towel to keep warm.
Continue cooking the remaining tortillas, adjusting heat settings as necessary.
