Place corn masa flour in a bowl with a pinch of salt.
Add 1 cup of hot boiling water and mix with a fork until combined.
Cover the mixture and let it rest for 5 minutes.
Knead the dough by hand for about 20 to 30 times.
Roll the dough and cut it into 12 pieces, making little balls.
Place the balls between two pieces of glass and press them to flatten.
Heat vegetable oil until hot but not too hot, then place the arepas in the oil.
Fry the arepas until they puff up and take them out; they are not completely cooked yet.
Cut a slit in each arepa and add an egg inside.
Hold the arepa in the oil for about 10 seconds, then drop it back in.
Cook for 1 to 2 minutes per side until done.
Remove from oil and place on paper towels.
Add a little bit of salt before serving.
