Jennifer Aniston Salad

1 cup cooked quinoa
1 tbsp lemon juice
2 tbsp extra virgin olive oil
1/2 tsp garlic powder
1/2 tsp sea salt
1/4 tsp black pepper
1/4 cup parsley, chopped
2 tbsp mint, chopped
1/4 cup chickpeas, drained and rinsed
1/2 cup chopped cucumber
1/4 cup red onion, finely chopped
1/4 cup crushed pistachio
1/4 cup feta cheese, crumbled

Rinse quinoa thoroughly and drain.

Cook quinoa as directed on the package (about 17 minutes).

Fluff the quinoa and set aside.

In a large bowl, whisk together lemon juice, extra virgin olive oil, garlic powder, sea salt, and black pepper to make the dressing.

Taste test the dressing and adjust ingredients as needed (add olive oil if too sour, or more lemon juice if too oily).

Add parsley and mint to the dressing and whisk to combine.

Add chickpeas, cucumber, red onion, and crushed pistachio to the bowl and toss to combine.

Add in the cooked quinoa and toss again.
