Ingredients
- ●1 cup cooked quinoa
- ●1/2 cup chickpeas, drained and rinsed
- ●1/2 cup diced cucumber
- ●1/2 cup halved cherry tomatoes
- ●1/4 cup finely chopped red onion
- ●1/4 cup crumbled feta cheese
- ●1/4 cup chopped parsley
- ●1/4 cup olive oil
- ●2 tbsp lemon juice
- ●1/2 tsp salt
- ●1/4 tsp black pepper
Instructions
- 1In a large bowl, combine the cooked quinoa, chickpeas, cucumber, cherry tomatoes, red onion, feta cheese, and parsley.
- 2In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to make the dressing.
- 3Pour the dressing over the salad ingredients and toss gently to combine.
- 4Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.
- 5Let the salad sit for about 10 minutes to allow the flavors to meld.
- 6Serve chilled or at room temperature.

- ●1 tbsp lemon juice
- ●1/2 tsp salt
- ●1/4 tsp black pepper
Instructions
- 1In a large bowl, combine the shredded chicken, Greek yogurt, and mayonnaise.
- 2Add the diced celery, red onion, grapes, and sliced almonds to the bowl.
- 3In a small bowl, whisk together the Dijon mustard, lemon juice, salt, and black pepper.
- 4Pour the dressing over the chicken mixture and stir until well combined.
- 5Taste and adjust seasoning if necessary.
- 6Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
- 7Serve on a bed of greens, in a sandwich, or with crackers.
