Recipe Information
Jennifer Aniston Salad
Cook bulgur wheat according to package directions, seasoning the water with salt.
Slice 120 grams of cucumber lengthwise, de-seed, and cut into half moons.
Finely chop 50 grams of red onion and soak in water for 15 minutes to reduce sharpness.
Finely chop 50 grams of pistachios until fine.
Wash and chop a handful of parsley and half a handful of mint.
Squeeze 60 milliliters of lemon juice, sieving to remove seeds.
In a bowl, combine lemon juice, 2 tablespoons of extra virgin olive oil, 2 teaspoons of salt, and freshly cracked black pepper.
Strain cooked bulgur wheat and place it in a large bowl with red onions, herbs, pistachios, cucumbers, chickpeas, and crumbled feta cheese.
Pour the dressing over the salad and toss until thoroughly combined.
