1 29-ounce can of hominy
1 chopped onion
1/3 of a 6-ounce can of tomato paste
1 clove of garlic, minced
1/4 cup of cilantro
1 tablespoon of olive oil
1/4 teaspoon of salt
1/8 teaspoon of pepper
2 tablespoons of chili powder
sliced radishes
limes
1 15-ounce block of tofu, pressed and cubed

Grab a large pot and set to medium heat.

Add 1 tablespoon of olive oil and your chopped onion; stir and cook for 2 minutes.

Add your pressed tofu to the pot and stir for another 3 minutes.

Add your minced clove of garlic, salt, pepper, cilantro, chili powder, and enough water to cover the ingredients.

Set your temperature to low and add your stewed tomatoes and tomato paste; continue to cook on low for about 20 minutes while stirring occasionally.

After 20 minutes, add your hominy and cook for another 15 minutes, stirring occasionally over low heat.

If it seems too thick, add more water until you get your desired consistency.

Remove from heat and add to a bowl; top with your sliced cabbage, radishes, and lime.
