Start by heating a wok and adding 1.5 tablespoons of olive oil.
Add finely chopped bell peppers and onions, along with minced garlic and oregano; stir-fry for about 2 minutes until slightly changed in color and volume.
Add sliced cured chorizo to the wok and stir-fry until heated through and it starts to secrete juices.
Stir in smoked paprika; if the mixture is drying out, add a knob of butter to help with moisture.
Add the brussels sprouts (a mixture of baby sprouts and sprout hobs) to the wok and stir-fry for about 3-4 minutes, ensuring each sprout is covered in the flavors and starts to char.
Pour in chicken stock (can be half chicken stock and half wine) and bring to a boil while continuing to stir-fry for another couple of minutes.
Season with salt and black pepper, toss everything together, and cover with a lid for another 4-5 minutes.
After cooking, add cornstarch to thicken the liquid in the pan, creating a glaze for the sprouts.
Sprinkle shredded red leicestershire cheese over the top and place under the grill to melt the cheese.
Garnish with sliced olives, crispy chorizo, and chopped parsley before serving.
