Tofu is a healthier plant-based option, while chicken gizzards are a more budget-friendly alternative.
Start with 4 pounds of mollejas, which are thawed and cut into smaller pieces.
Trim any loose hanging parts from the mollejas and fillet thicker pieces if necessary.
Season the mollejas with barbecue general seasoning and Prime Time seasoning, applying a heavy layer on both sides.
Mix the mollejas to ensure they are well coated with seasoning and refrigerate for 1 hour.
Preheat the Yoder Y640 pellet smoker to 275 degrees using pecan pellets.
Place the mollejas on the bottom grates of the smoker, ensuring they are spread out.
Cook the mollejas for 30 minutes, then flip them over and cook for another 30 minutes.
After a total of 1 hour, wrap the mollejas in foil and add more seasoning on top before sealing tightly.
Cook the wrapped mollejas for an additional 45 minutes.
Unwrap the mollejas and prepare to sear them by removing the heat diffuser from the smoker.
Sear the mollejas on the grill grates until crispy, flipping them to ensure even cooking.
Prepare a salsa by boiling 15 serrano peppers, then blending them with tomatillos, garlic, tomatoes, lime juice, cilantro, avocado, water, salt, and black pepper.
Once the salsa is blended, assemble tacos using corn tortillas, mollejas, salsa, cilantro, and lime.
