Ingredients
- ●2 pounds russet potatoes
- ●1/2 cup milk
- ●1/4 cup unsalted butter
- ●1 cup shredded cheddar cheese
- ●1/2 tsp garlic powder
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/4 cup sour cream (optional)
Instructions
- 1Peel and cut the potatoes into chunks.
- 2Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.
- 3Bring the water to a boil over medium-high heat and cook the potatoes until tender, about 15-20 minutes.
- 4Drain the potatoes and return them to the pot.
- 5Add the butter, milk, garlic powder, salt, and pepper to the potatoes.
- 6Mash the potatoes using a potato masher or a hand mixer until smooth and creamy.
- 7Stir in the shredded cheddar cheese until melted and well combined.
- 8If desired, mix in the sour cream for extra creaminess.
- 9Taste and adjust seasoning if necessary.
- 10Serve warm as a side dish.

- ●2 medium potatoes, grated
- ●1/2 cup all-purpose flour
- ●1/4 cup grated Parmesan cheese
- ●1 large egg
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/4 tsp garlic powder
- ●1/4 tsp onion powder
- ●1/4 cup chopped fresh parsley
- ●oil for frying
Instructions
- 1Grate the zucchinis and potatoes using a box grater or food processor.
- 2Place the grated zucchini and potatoes in a clean kitchen towel and squeeze out excess moisture.
- 3In a large bowl, combine the grated zucchini, potatoes, flour, Parmesan cheese, egg, salt, pepper, garlic powder, onion powder, and parsley. Mix until well combined.
- 4Heat a large skillet over medium heat and add enough oil to cover the bottom of the pan.
- 5Once the oil is hot, scoop about 2 tablespoons of the mixture and flatten it slightly to form a fritter.
- 6Fry the fritters in batches, cooking for about 3-4 minutes on each side or until golden brown and crispy.
- 7Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
- 8Repeat with the remaining mixture, adding more oil to the skillet as needed.
- 9Serve warm with your choice of dipping sauce or sour cream.
