Clean the beef ribs thoroughly with water.
Add a splash of vinegar and salt to the cleaned ribs.
Remove excess water from the ribs after cleaning.
In a separate pot, start boiling the beef ribs until they release foam on top.
Skim off the foam that forms on the surface.
While the ribs are boiling, clean the frijoles chipuco, removing any debris.
Add the cleaned frijoles chipuco to the pot with the beef ribs.
Cover the pot and let it cook for about 1 hour, checking to ensure there's enough water.
After 40 minutes, add salt, pepper, and cumin to the pot.
Add a whole head of garlic to the pot for flavor.
Add 3 bay leaves for additional flavor.
After 1.5 hours, check the beans; they should be tender.
Remove the garlic, bay leaves, and any other solids for flavor.
Add corn to the pot and cook for 5 minutes.
After 5 minutes, add yuca to the pot and cook for an additional 12 minutes.
Finally, add zucchini and any desired spices, stirring gently to combine.
Serve hot with warm tortillas.
