Greek Inspired Quesadillas!

Place 4 tortillas on a flat surface.

Add drained spinach on top of each tortilla.

Add a couple of sun-dried tomatoes on each tortilla.

Sprinkle a few olives on each tortilla.

Add mozzarella cheese on top of the olives and tomatoes.

Add feta cheese on top of the mozzarella.

Top each tortilla with another tortilla.

Bake in the oven at 400°F for 8 to 10 minutes.

Dice English cucumber and set aside.

In a bowl, combine 1 cup of Greek plain yogurt, 2 teaspoons of garlic, and 1 tablespoon of lemon juice.

Drizzle olive oil over the yogurt mixture and combine well.

Refrigerate the yogurt mixture for 10 minutes.

Remove the quesadillas from the oven and place on a plate.

Cut the quesadillas in half to reveal the melted cheese and filling.

Serve with the tzatziki dip.
