Roughly chop 4 chilies (2 red, 2 green) into halves or quarters.
Chop 1/2 of a green bell pepper into similar sizes.
Add the chopped chilies, bell pepper, 2 medium white onions, and 6 cloves of garlic to a blender and pulse until finely chopped.
In a bowl, add 500 g of ground beef.
Add 10 g of salt, 8 g of freshly ground black pepper, 3 g of smoked paprika, 1 g of ground cardamom, 1/2 crumbled chicken stock cube, 2 g of cinnamon, 10 g of baking soda, and 10 g of ground coffee to the beef.
Mix the beef and seasonings by hand to distribute evenly.
Fold in the blended chilies, bell pepper, onions, and garlic into the beef mixture.
In a small bowl, combine 3 tbsp of mayonnaise, 1 tbsp of ketchup, 2 tbsp of chipotle sauce, juice from 1/2 lemon, and 1 tsp of smoked paprika. Stir until smooth and creamy.
Slice 2 thin pieces of manego cheese and a small handful of grated mozzarella for each taco, and chop fresh coriander.
Form the beef mixture into 110 g meatballs.
Warm a griddle or skillet over medium to high heat with a splash of oil.
Place the bread on top of each meatball and smash each patty flat to about 0.5 cm (1/4 inch) thick on the hot surface.
Cook the smashed patties for about 2 to 4 minutes until the edges crisp up nicely, then flip them over.
Immediately add manego cheese slices, grated mozzarella, and coriander on top of the patties.
Cook for about 2 minutes more while the bread side fries.
Optionally, add tomato bruschetta, diced peppers, or chilies as toppings.
If you want warmer sauce, add it now on the other half of the patty; otherwise, fold it and let it cook for 1 to 2 minutes before adding the sauce.
Optionally add a slice of lettuce for texture and bitterness before serving.
